Drawing from the minimalist approach that Saxum Winery takes in the vineyard and cellar, vinifying without chemical fertilizers, herbicides or pesticides, and avoiding supplemental irrigation, Lake|Flato designed the new winery to be completely subterranean. The crushing, fermenting and barrel storage caves are set back into the hillside, minimizing the facility's presence on the landscape and in the vineyard. Floating outside between the two working portals, a green-roofed, steel-framed pavilion houses lounge space, private offices and a lab/kitchen, connecting the caves to the vineyard. In 2010, Saxum’s James Berry Vineyard was awarded #1 wine of the year by Wine Spectator, the industry’s highest honor. In collaboration with BK Architects.
